To make the ricotta very dry, dry to drain out any excess liquid from the container...

Mix the ricotta with the vanilla, sugar, and chocolate chips
(or rainbow/multicolored sprinkles) in a large bowl for several minutes
(You can use a large tablespoon,
just be sure that no sugar is stuck to the bottom or sides to avoid the filling becoming gritty)

Now spoon into cannoli shells,
and drizzle a little of the chocolate syrup over it and serve on a small plate...
